Pasta for beginners.

Ingredients for 4-5 servings

  • 400 g wholemeal flour type 405 oder 550
  • 4 organic eggs
  • 2 tbs olive oil
  • 1 pinch of sea salt
  • flour for the working top

I love homemade pasta. It makes me happy like a child every time I make it. Basti gifted me a pasta maker last year, so I tried that simple pasta recipe of a friend immediately. I’m not the most patient person, so it didn’t work well for the first time. But with a little bit of practice it worked better and better every time I tried. For my daughter’s 5th birthday I prepared lots of dough, so every child and every parent could make its own pasta. It was lots of fun and easy for everyone. So if you like pasta, don’t hesitate to try it. And if you like colors, just add beets, curcuma or any other natural ingredient to color it. I will add my recipe for beets-pasta with rocket-pesto soon. Now I hope, this one gets you inspired enough to start:

I prepare the dough with a kitchen machine, but you can also mix it with a simple fork. Always mix from the margin to the center of your bowl. If the dough gets firmer, you can go on with your hands. Knead it for ten minutes at least – it should be firm, but not too dry finally. Add water or flour if necessary. Let it rest for 30 minutes at least. Then make a big roll and cut it into handy pieces. Now you can start to prepare the pasta sheets with the pasta maker. Start with the highest setting and reduce the setting after every time you’ve been pulling the dough through the machine. Don’t forget to salt the sheets properly after every step! It’s useful to give some flour on both sides of the sheets before giving them through the pasta maker. It makes the cutting process much easier. If the sheets are thin enough, you can go on and cut spaghetti, tagliatelle or whatever is possible. Your children should start with tagliatelle, they are much easier to make than spaghetti. Cook the fresh pasta for two minutes at least. Enjoy!
